A cultural and culinary experience about ancient local food, a gastronomic walk through the deep roots of Tuscan cuisine in a familiar, friendly, safe and relaxing enviroment.

Immerse yourself in the mythslegends, symbols and recipes of an ancient Tuscan civilization, the Etruscanswho lived in Italy some 2,800 years ago. They chose Fiesole, my hometown, to build one of their village, calling it Vipsul

MenĂ¹: using seasonal and local ingredients we'll prepare an entire Etruscan banquet. 

  • Two starters: "Scriblita" the ancient Etruscan bread seasoned with ricotta cheese and topped with our extra virgin olive oil produced in Chianti. "Moretum" the ancient Tuscan pesto made with celery leaves, garlic, pecorino cheese, olive oil and walnuts to taste in a secret way (no spoiler).
  • Fresh pasta: ancient dough made of flour and water to create fresh pasta 100% hand made (no rolling pin) 
  • Seasonal sauce 
  • Dessert: gelato with an Etruscan touch. 
  • Time: morning session (10:00 am - 2:00 pm) or afternoon session (3:30/5 pm 7:30/9 pm). The time of the afternoon session changes according to sunset time (later in Summer).
